We are offering these feisty, hens for you to try. Said to be naturally juicy and succulent, and to stay juicy longer after cooking. They thrive in fresh air and pasture, the very conditions we provide with our traditional methods. They have longer legs and a narrower keel and breast and a decent amount of the flavorful yellow fat treasured by cooks. Their slow growth, although it makes for a firmer flesh and a richer flavor, usually keeps them from the larger producers. We are happy to provide the additional time, feed and attention they need so we can offer you this truly Artisanal Food.

As with all of our birds, these are raised with plenty of space to roam and a healthy diet, making for the tastiest and juiciest chicken you've ever had. Conveniently frozen and shrink-wrapped, it may look like the chicken in the grocery store, but that's where the similarity ends. These birds were developed for the gourmet market and take additional time and care to develop their famous flavor. These are a slower growing, more muscular chicken that tastes like chicken should taste.

Like all of our chickens these fancy birds like to spend the day scratching and dust-bathing in the sunlight. They love free-ranging, foraging for grass and bugs.
