Our lambs are raised entirely on pasture. They are never fed grain, they fatten only on their mother's milk and the grasses of spring and summer. NEW for 2024 - We no longer sell lamb by the hanging weight. We have found that it often confuses folks. Typically when you purchase a meat animal from a farm, it needs to go to a processor to eventually become those lovely packages in your freezer. This where the confusion starts. Say (for easy illustration purposes) you have a lamb that is 100 pounds LIVE weight, or "on the hoof". when the skin and entrails are removed, you have a carcass that may weigh around 60 pounds, or 60% of the live weight. This is referred to as HANGING weight, and is often the price you are quoted. The confusion continues when the box of meat is finally delivered. After cutting fat and waste from the carcass, trimming to an customer's order, perhaps de-boning some cuts and so on, there will remain perhaps 60% or less of the carcass weight. This is the CUT weight, and is what most folks are used to when buying from a grocery. Chances are neither your farmer nor butcher has cheated you, the amount of meat you received was a function of the butchering process and the specific cuts you requested. In an attempt to simply things, we have decided to concentrate on the most popular cuts we have sold in the past. We get the processing done for you, vacuum pack and freeze, label and just get it ready for your home. While our price may seem initially higher than you see elsewhere, please remember that generally the price you see elsewhere will be a "hanging" or even a "live" weight price which includes the trim and waste. Our price is for the meat you actually receive. Our price would be more fairly compared to your grocery store price. Our quality however, will speak for itself! and the price you see represents a fair price to the butcher as well us to us, the farmer and retailer.
